Fall Flavors, Texas Style: Pumpkin Spice Recipes for Busy Mamas

Confession time: Monday is my absolute favorite day to write to you. It feels like a reset button, a chance to start fresh, set intentions for the week, and share little moments of inspiration.

But yesterday? I totally missed it. 🙈

Not because I forgot, or didn’t have anything to say - but because I was out at a local farm with my kids.

And let me tell you, it wasn’t exactly crisp fall air and cozy sweaters… more like fall sweat! 🥵 Texas clearly didn’t get the memo that yesterday was the first day of autumn.

Still, it felt incredible to unplug. Pumpkins, rope swings, goats and baby chickens, horse riding - and just tuning in to my kids instead of my inbox. Honestly, that was the reset I didn’t even know I needed.

Cozy Fall Recipes for Busy Mamas

Since it’s officially fall (even if Texas feels like summer), I wanted to share two of my favorite hormone-friendly pumpkin spice recipes. Both are simple, protein-packed, and give you cozy fall flavor without the sugar crash.

Pumpkin Spice Protein + Collagen Latte

Because let’s be real… Texas may still feel like summer, but my taste buds are ready for fall. This latte is hot or iced, protein-packed, and next-level cozy.

Ingredients:

  • 1 cup brewed coffee (hot or cold brew if making iced)

  • ½ cup unsweetened cashew milk or organic whole milk (warm + frothed for hot, cold for iced)

  • 1 scoop vanilla protein powder (20–25g protein)

  • 1 scoop unflavored collagen peptides (10g protein)

  • 2 tbsp pumpkin puree (fresh for hot, frozen cubes for iced)

  • ½ tsp pumpkin pie spice + pinch of cinnamon

  • 1–2 tsp pure maple syrup (or stevia/monk fruit to taste)

  • Optional: splash of vanilla extract + tiny pinch of sea salt

Directions – Hot Version:

  1. Blend protein, collagen, pumpkin puree, spices, maple, and half the milk until smooth.

  2. Add hot coffee + remaining warm milk, blend or froth until creamy.

  3. Pour into your favorite mug and sprinkle cinnamon on top.

Directions – Iced Version (Texas fall sweat style 🥵):

  1. Blend protein, collagen, pumpkin ice cubes, spices, maple, and half the milk until smooth.

  2. Add cold brew coffee + remaining milk, blend or shake in a jar.

  3. Pour over ice and sprinkle cinnamon on top.

Pro Tip – Pumpkin Spice Cold Foam:

Froth cold milk with:

  • A sprinkle of pumpkin pie spice or cinnamon

  • A drizzle of maple syrup (or sweetener of choice)

  • A splash of vanilla extract

Pour this over your iced latte for a creamy, coffeehouse-style topper!

Pumpkin Spice Overnight Oats (Batch Prep)

The perfect grab-and-go breakfast that feels like fall in a jar. Make 5 jars at once to simplify your mornings.

Ingredients (per jar):

  • ½ cup rolled oats

  • 1 scoop vanilla protein powder

  • ½ cup Ultra-filtered milk

  • 2 tbsp pumpkin puree

  • ½ tsp pumpkin pie spice

  • 1 tsp chia seeds

  • Drizzle of almond butter (add just before eating)

Directions – Batch Prep for 5 jars:

  1. Line up 5 clean pint-sized mason jars.

  2. Add oats, protein powder, milk, pumpkin puree, pumpkin pie spice, and chia seeds to each jar.

  3. Stir well or shake with the lid on until fully combined.

  4. Seal jars and refrigerate overnight (they’ll last up to 5 days).

  5. In the morning, stir and add a drizzle of almond butter before eating.

Tips:

  • For creamier oats, add a splash more milk before eating.

  • Want them warm? Microwave each jar 30–45 seconds.

  • Top with pumpkin seeds, walnuts, or extra cinnamon for variety.
